Caramelized Banana Ice Cream

Ingredients

The ice cream base

  • 2 C heavy cream
  • 1 C whole milk
  • ½ C white sugar
  • ¼ t salt
  • 2 t vanilla

The caramelized bananas

  • 4 ripe bananas sliced into 1/2-1 inch segments
  • ¼ C brown sugar
  • 1 t cinnamon
  • 1 T real butter, melted

Instructions

  1. Preheat the oven to 400°F.
  2. Line a 9 x 13 inch baking dish with foil and place the sliced bananas in it.
  3. Sprinkle the brown sugar, cinnamon, and melted butter over the bananas and toss to combine.
  4. Spread the bananas out in a single layer and bake for 15 minutes.
  5. Stir the bananas and bake for an additional 15 minutes, then remove from the oven and let cool.
  6. In a separate bowl, combine the heavy cream, whole milk, white sugar, salt, and vanilla, whisking until the sugar is dissolved, then chill in the fridge.
  7. Once the bananas are cooled, puree them until smooth and mix them into the chilled milk mixture.
  8. Chill the entire mixture before churning it in an ice cream maker.
  9. Transfer the churned ice cream to an airtight container and freeze for several hours to set.
