Instructions
- Preheat the oven to 375°F.
- Place bananas and dates in a 7 x 11 inch baking dish.
- Drizzle with vanilla extract and coconut oil.
- Bake for 35 to 45 minutes until bananas caramelize and smell fragrant.
- Puree the banana mixture and coconut milk in a blender until smooth.
- Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.
- Serve topped with nuts, berries, or sprinkles.
