Roasted Banana Coconut Ice Cream

Ingredients

  • 4-5 medium bananas, sliced into 1" pieces
  • 2 pieces dates, chopped
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut oil
  • 1 can (13.5 ounce) full fat coconut milk

Instructions

  1. Preheat the oven to 375°F.
  2. Place bananas and dates in a 7 x 11 inch baking dish.
  3. Drizzle with vanilla extract and coconut oil.
  4. Bake for 35 to 45 minutes until bananas caramelize and smell fragrant.
  5. Puree the banana mixture and coconut milk in a blender until smooth.
  6. Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.
  7. Serve topped with nuts, berries, or sprinkles.
