Ingredients

The Cake

  • 2 large ripe bananas
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar
  • ½ cup butter, softened
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp vanilla extract
  • 1 tsp lemon extract
  • ¼ cup mascarpone
  • 4 large organic eggs
  • ¾ cup organic milk

The Sauce

  • ½ cup butter
  • ½ cup brown sugar
  • 2 tbsp sugar
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp vanilla extract
  • 3 tbsp dark rum
  • ¼ cup evaporated milk

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix flour, brown sugar, baking powder, and baking soda, then set aside.
  3. In a separate bowl, mash the bananas until smooth, then add mascarpone, softened butter, vanilla extract, lemon extract, and sugar, blending until smooth.
  4. Separate the eggs, placing the whites in a separate bowl. Add the yolks to the banana mixture and blend until combined.
  5. Whip the egg whites until foamy and peaks form, then set aside.
  6. Add the banana mixture to the dry ingredients and blend at low speed until smooth.
  7. Fold the whipped egg whites into the batter gently.
  8. Spray a Bundt pan with non-stick spray and pour the batter evenly into the pan.
  9. Bake for 45 minutes, then allow to cool for 20 minutes.
  10. While the cake cools, prepare the sauce by cooking butter, brown sugar, and sugar in a pan over medium heat until thick.
  11. Lower the heat and add cinnamon, nutmeg, vanilla extract, and rum, then stir in evaporated milk until creamy.
  12. Flip the cooled cake onto a plate and pour the sauce over the top.
