The Sauce

Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix flour, brown sugar, baking powder, and baking soda, then set aside.
- In a separate bowl, mash the bananas until smooth, then add mascarpone, softened butter, vanilla extract, lemon extract, and sugar, blending until smooth.
- Separate the eggs, placing the whites in a separate bowl. Add the yolks to the banana mixture and blend until combined.
- Whip the egg whites until foamy and peaks form, then set aside.
- Add the banana mixture to the dry ingredients and blend at low speed until smooth.
- Fold the whipped egg whites into the batter gently.
- Spray a Bundt pan with non-stick spray and pour the batter evenly into the pan.
- Bake for 45 minutes, then allow to cool for 20 minutes.
- While the cake cools, prepare the sauce by cooking butter, brown sugar, and sugar in a pan over medium heat until thick.
- Lower the heat and add cinnamon, nutmeg, vanilla extract, and rum, then stir in evaporated milk until creamy.
- Flip the cooled cake onto a plate and pour the sauce over the top.
