Instructions
- 1. Preheat the oven to 350°F and line a 9x9 pan with parchment paper, greasing it with nonstick spray.
- 2. In a small bowl, mix almond flour, baking soda, cinnamon, and salt.
- 3. In a large bowl, mash the ripe banana and whisk in the eggs, coconut oil, maple syrup, vanilla, and rum.
- 4. Combine the dry ingredients with the wet ingredients and set aside.
- 5. In a saucepan, melt the butter over medium-high heat, then add the brown sugar and stir until smooth.
- 6. Remove from heat and stir in the rum, cinnamon, and vanilla, then pour into the greased pan.
- 7. Place the sliced bananas face down in the caramel, then pour the banana cake batter over the top.
- 8. Bake for 30 minutes or until a toothpick comes out clean.
- 9. Let cool for 10 minutes, then flip the cake onto a plate and let cool another 20 minutes before cutting into 9 slices.
