Ingredients

Caramelized Topping

  • ¼ cup butter
  • ½ cup light brown sugar
  • 2 tbsp dark spiced rum
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • 3 pieces bananas, sliced

Banana Cake

  • cups almond flour
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 large ripe banana, mashed
  • 2 pieces eggs
  • ¼ cup coconut oil, melted
  • cup maple syrup
  • 2 tbsp dark spiced rum

Instructions

  1. 1. Preheat the oven to 350°F and line a 9x9 pan with parchment paper, greasing it with nonstick spray.
  2. 2. In a small bowl, mix almond flour, baking soda, cinnamon, and salt.
  3. 3. In a large bowl, mash the ripe banana and whisk in the eggs, coconut oil, maple syrup, vanilla, and rum.
  4. 4. Combine the dry ingredients with the wet ingredients and set aside.
  5. 5. In a saucepan, melt the butter over medium-high heat, then add the brown sugar and stir until smooth.
  6. 6. Remove from heat and stir in the rum, cinnamon, and vanilla, then pour into the greased pan.
  7. 7. Place the sliced bananas face down in the caramel, then pour the banana cake batter over the top.
  8. 8. Bake for 30 minutes or until a toothpick comes out clean.
  9. 9. Let cool for 10 minutes, then flip the cake onto a plate and let cool another 20 minutes before cutting into 9 slices.
