Ingredients

The crepe batter

  • ½ cup almond meal
  • ½ cup old fashioned oats
  • 3 tablespoons all purpose flour
  • 1 cup milk
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 tablespoon brown sugar
  • a tiny pinch salt

The filling

  • 4 bananas, sliced
  • 2 tablespoons Nutella (or chocolate of any kind), melted

Instructions

  1. Grind the oats and almond meal in a food processor until flour-like.
  2. Mix the ground mixture with flour, milk, egg, vanilla, brown sugar, and salt until smooth.
  3. Heat a nonstick skillet over low heat and pour about ¼ cup of batter, swirling to spread thinly.
  4. Cook until the edges lift easily, then flip and cook briefly if desired.
  5. Repeat with the remaining batter, then stuff crepes with sliced bananas and toppings of choice.
  6. Drizzle with melted chocolate and serve warm or cold.
