Paleo Lime Bars
Ingredients
The crust/crumble

The lime filling

limes, juice of (and zest of one for topping)

pure maple syrup

warm water

Instructions
- Preheat the oven to 350°F and line a 9x9 inch baking dish with parchment paper.
- In a medium bowl, combine all crust ingredients and mix until crumbly.
- Press ¾ of the mixture into the bottom of the prepared baking dish to form the crust.
- Bake the crust for about 12 minutes until the edges are slightly golden.
- While the crust is baking, prepare the lime filling by heating all filling ingredients except water and gelatin in a small saucepan over medium-low heat.
- In a small bowl, mix warm water with gelatin, then add to the saucepan and whisk to combine.
- Once the crust is done, let it cool for about 5 minutes.
- Pour the lime filling over the crust and sprinkle the remaining crust mixture on top.
- Chill in the fridge or freezer until set, then cut into 9 bars and serve.
