Paleo Lime Bars

Ingredients

The crust/crumble

  • 2 cups almond flour
  • ¼ cup tapioca flour
  • ¼ cup coconut oil, room temperature
  • ¼ cup pure maple syrup
  • ¼ tsp sea salt

The lime filling

  • 1 avocado
  • 4 small limes, juice of (and zest of one for topping)
  • 2 tbsp pure maple syrup
  • ¼ cup warm water
  • 1 tbsp gelatin

Instructions

  1. Preheat the oven to 350°F and line a 9x9 inch baking dish with parchment paper.
  2. In a medium bowl, combine all crust ingredients and mix until crumbly.
  3. Press ¾ of the mixture into the bottom of the prepared baking dish to form the crust.
  4. Bake the crust for about 12 minutes until the edges are slightly golden.
  5. While the crust is baking, prepare the lime filling by heating all filling ingredients except water and gelatin in a small saucepan over medium-low heat.
  6. In a small bowl, mix warm water with gelatin, then add to the saucepan and whisk to combine.
  7. Once the crust is done, let it cool for about 5 minutes.
  8. Pour the lime filling over the crust and sprinkle the remaining crust mixture on top.
  9. Chill in the fridge or freezer until set, then cut into 9 bars and serve.
