Instant Pot Dirty Rice

The rice

Rice (jasmine, basmati, or white long grain)
Instructions
- 1. Turn on the Sauté setting and add bacon fat or oil.
- 2. Cook the gizzards until well browned, stirring occasionally.
- 3. Add the sausage and cook for a few minutes.
- 4. Add the chicken livers and cook until mostly done.
- 5. Add the onion, celery, and green pepper and cook until softened.
- 6. Stir in the garlic and cook for 1 minute.
- 7. Add the pepper, salt, cayenne, and Cajun/Creole seasoning, then stir.
- 8. Layer the rice evenly over the top without stirring.
- 9. Pour in the broth without stirring.
- 10. If using dried parsley, add it now; if using fresh, add it later.
- 11. Cancel the sauté setting, close the lid, and seal the vent.
- 12. Set to Pressure Cook/Manual for 8 minutes on high pressure.
- 13. After cooking, quickly release the steam/pressure.
- 14. Once the pin drops, open the lid and stir the rice.
- 15. Taste and adjust salt or seasoning if needed, then serve.
