Instant Pot Dirty Rice

Ingredients

The base and fats

  • 3 Tbsp Bacon Fat (or cooking oil)
  • 2 ½ cups Low Sodium Chicken Broth

The meats

  • ½ lb Chicken Gizzards, minced
  • ½ lb Bulk Sausage (hot Italian is nice)
  • ½ lb Chicken Livers, finely minced to a paste

The vegetables

  • 1 sm Onion, diced
  • 1 unit Green Bell Pepper, chopped
  • 2 ribs Celery, diced
  • 5 cloves Garlic, pressed or finely minced
  • cup Chopped Parsley

The seasonings

  • ½ tsp Pepper
  • ½ tsp Kosher Salt (or to taste)
  • ¼ tsp Cayenne Pepper (optional)
  • 2 tsp Low Sodium Creole or Cajun Seasoning

The rice

  • 2 cups Rice (jasmine, basmati, or white long grain)

Instructions

  1. 1. Turn on the Sauté setting and add bacon fat or oil.
  2. 2. Cook the gizzards until well browned, stirring occasionally.
  3. 3. Add the sausage and cook for a few minutes.
  4. 4. Add the chicken livers and cook until mostly done.
  5. 5. Add the onion, celery, and green pepper and cook until softened.
  6. 6. Stir in the garlic and cook for 1 minute.
  7. 7. Add the pepper, salt, cayenne, and Cajun/Creole seasoning, then stir.
  8. 8. Layer the rice evenly over the top without stirring.
  9. 9. Pour in the broth without stirring.
  10. 10. If using dried parsley, add it now; if using fresh, add it later.
  11. 11. Cancel the sauté setting, close the lid, and seal the vent.
  12. 12. Set to Pressure Cook/Manual for 8 minutes on high pressure.
  13. 13. After cooking, quickly release the steam/pressure.
  14. 14. Once the pin drops, open the lid and stir the rice.
  15. 15. Taste and adjust salt or seasoning if needed, then serve.
