Easy Dirty Rice

Ingredients

The meat and bacon

  • 4-5 slices bacon, chopped
  • 1 pound chicken livers, chopped
  • 1 pound ground beef

The vegetables and aromatics

  • 1 medium onion, chopped
  • 3-4 teaspoons minced garlic
  • 2 teaspoons fresh thyme
  • 2 leaves bay leaves
  • 1 small green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3-4 stalks green onions, chopped (or scallions)
  • 2-3 tablespoons parsley, chopped

The rice and stock

  • 1½-2 cups beef stock
  • 6 cups cooked rice

The seasonings

  • 1 tablespoon Creole seasoning (or more to taste)
  • to taste salt and pepper
  • to taste pepper flakes or hot sauce

Instructions

  1. Cook the bacon in a large sauté pan until crispy, then set aside.
  2. In the same pan, add oil if needed and sauté onions, thyme, bay leaf, and garlic for a few minutes.
  3. Add chicken livers, ground beef, and Creole seasoning, cooking for about 2 minutes.
  4. Stir in bell peppers, celery, salt, and pepper, cooking for another 5 minutes.
  5. Pour in beef stock and bring to a boil, then lower heat and simmer for about 5 minutes.
  6. Mix in the cooked rice and cook until heated through, adding more stock if necessary.
  7. Remove from heat, take out the bay leaves, and stir in parsley before serving.
