Dirty Rice

Ingredients

  • 1 tablespoon vegetable oil
  • 8 ounces ground pork
  • 1 medium onion, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 1 rib celery, minced
  • 4 ounces chicken liver, rinsed and chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper
  • cups chicken broth
  • cups long-grain white rice, rinsed
  • 2 leaves bay leaves
  • 3 scallions thinly sliced, for garnish

Instructions

  1. Heat vegetable oil in a large Dutch oven over medium-high heat until shimmering.
  2. Add ground pork and cook until browned, breaking up any clumps of meat.
  3. Add onion, bell pepper, and celery; cook until softened.
  4. If using, add chicken livers, garlic, salt, thyme, and cayenne; cook until chicken livers are browned.
  5. Transfer the meat mixture to a fine-mesh strainer and cover to keep warm.
  6. In the same Dutch oven, add chicken broth, rice, and bay leaves; bring to a boil.
  7. Reduce heat to low, cover, and cook until rice is tender.
  8. Remove from heat, discard bay leaves, fluff rice, and return the meat mixture to the pot.
  9. Gently stir to combine and garnish with scallions before serving.
