Instructions
- Heat olive oil in a skillet and sauté onion, celery, and bell peppers until softened, then add garlic.
- Add vegan sausage to the skillet and cook until browned, crumbling it as it cooks.
- Stir in the jasmine rice and seasonings, cooking for a minute until fragrant.
- Add bay leaves and vegetable stock, bring to a boil, then reduce heat to low, cover, and cook for 20-25 minutes until rice is tender.
- Remove from heat, discard bay leaves, fluff rice with a fork, and season with salt and pepper to taste.
