Dirty Rice

Ingredients

The base

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 stalks celery, diced
  • 2 medium green bell peppers, diced
  • 3 cloves garlic, minced

The protein

  • 14 ounces vegan sausage

The rice

  • 1 ½ cups jasmine rice, rinsed and drained

The seasonings

  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried thyme
  • 2 pieces bay leaves

The liquid

  • 3 cups vegetable stock

To taste

  • to taste salt
  • to taste pepper

Instructions

  1. Heat olive oil in a skillet and sauté onion, celery, and bell peppers until softened, then add garlic.
  2. Add vegan sausage to the skillet and cook until browned, crumbling it as it cooks.
  3. Stir in the jasmine rice and seasonings, cooking for a minute until fragrant.
  4. Add bay leaves and vegetable stock, bring to a boil, then reduce heat to low, cover, and cook for 20-25 minutes until rice is tender.
  5. Remove from heat, discard bay leaves, fluff rice with a fork, and season with salt and pepper to taste.
