Dirty Rice

Instructions
- Heat oil in a large pot over medium heat.
- Add sausage and chicken liver (if using) and cook for 4-5 minutes, breaking the meat into small pieces.
- Drain excess grease and add onion, bell pepper, and celery to the pot.
- Cook for 4-5 minutes until vegetables are softened.
- Add garlic and cook for 30 seconds.
- Stir in Cajun seasoning, thyme, salt, pepper, bay leaf, rice, and chicken broth.
- Bring to a simmer, cover, and reduce heat to low.
- Cook for 20 minutes until all liquid is absorbed.
- Let stand for 5 minutes, then remove bay leaf.
- Stir in green onions and fluff rice with a fork.
- Sprinkle with parsley and serve.
