Cajun Rice

Instructions
- Rinse the rice and transfer it to a heavy-bottomed pot with a lid.
- Add beef broth and bring to a boil, then reduce heat, cover, and cook for 18 minutes.
- In a large sauté pan, cook the chopped bacon for 4-5 minutes and set aside.
- Add oil to the bacon pan, then sauté onions, thyme, bay leaf, and garlic for 2-3 minutes.
- Add chicken liver and ground beef with Creole seasoning; cook for 5-7 minutes.
- Stir in bell peppers, celery, salt, and pepper, and cook for another 5 minutes.
- Pour in stock, bring to a boil, then lower heat and simmer for 5 minutes.
- Mix in the cooked rice and heat through for 5-7 minutes, adding more stock if necessary.
- Remove from heat, discard the bay leaf, and stir in bacon and green onions.
- Serve warm with pepper flakes or hot sauce.
