Cajun Rice

Ingredients

The rice

  • 2 cups uncooked long-grain rice
  • cups water or broth

The meat and vegetables

  • 2-3 pieces bacon, chopped
  • 1 medium onion, diced
  • 3-4 teaspoons garlic, minced
  • 2 teaspoons fresh thyme
  • 2 pieces bay leaf
  • ½ pound chicken liver, chopped
  • 1 pound ground beef
  • 1 small green bell pepper, chopped
  • 1 stick celery, chopped (about ¼ cup)

The broth and seasoning

  • 1½ - 2 cups beef stock
  • 2 teaspoons Creole seasoning
  • 3-4 pieces green onion scallions, chopped
  • ½ - 1 cup chicken or beef broth
  • 1-2 tablespoons parsley, chopped
  • to taste pepper flakes or hot sauce

Instructions

  1. Rinse the rice and transfer it to a heavy-bottomed pot with a lid.
  2. Add beef broth and bring to a boil, then reduce heat, cover, and cook for 18 minutes.
  3. In a large sauté pan, cook the chopped bacon for 4-5 minutes and set aside.
  4. Add oil to the bacon pan, then sauté onions, thyme, bay leaf, and garlic for 2-3 minutes.
  5. Add chicken liver and ground beef with Creole seasoning; cook for 5-7 minutes.
  6. Stir in bell peppers, celery, salt, and pepper, and cook for another 5 minutes.
  7. Pour in stock, bring to a boil, then lower heat and simmer for 5 minutes.
  8. Mix in the cooked rice and heat through for 5-7 minutes, adding more stock if necessary.
  9. Remove from heat, discard the bay leaf, and stir in bacon and green onions.
  10. Serve warm with pepper flakes or hot sauce.
