Instructions
- Prepare the sloppy Joe filling according to your recipe and let it cool slightly before mixing in half of the cheddar cheese.
- Preheat the oven to 350°F and grease a 10-inch cast iron skillet.
- In a food processor, combine the cheeses, eggs, almond flour, baking powder, and sweet corn extract (if using) to form a thick batter.
- Spread the batter evenly in the prepared skillet.
- Layer the sloppy Joe filling on top of the batter and bake for 35-40 minutes.
- Sprinkle the remaining cheddar cheese on top and return to the oven until melted.
- Allow the casserole to cool for 5 minutes before serving.
