Juicy, Shredded Crockpot Mexican Chicken

Ingredients

The chicken

  • 2 lbs boneless skinless chicken thighs (or breasts)
  • 1 can green chiles
  • ½ cup chicken broth
  • 1 unit lime (juice of)

The seasoning

  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp sea salt
  • ½ tsp pepper
  • ¼ tsp cayenne pepper (to taste)

Instructions

  1. Mix all seasoning ingredients in a small bowl or jar.
  2. Add chicken to the crockpot and coat with the seasoning.
  3. Pour in the chicken broth and green chiles, then squeeze in the lime juice.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, shred the chicken with two forks and serve.
