Instructions
- Heat a skillet and add canola oil, cooking each tortilla until golden and bubbly.
- Preheat the grill to medium-high heat.
- Mix BBQ sauce, tequila, lime zest, orange zest, lime juice, garlic, jalapeño, cumin, salt, and pepper in a bowl.
- Combine chicken with olive oil and 1/4 cup of the BBQ sauce mixture, then grill the chicken until cooked through.
- Shred the chicken and toss with remaining BBQ sauce.
- Prepare the salsa by combining diced tomatoes, mango, jalapeños, green onions, cilantro, lime zest, orange zest, lime juice, tequila, and salt in a bowl.
- Spread avocado on crispy tortillas, add shredded chicken, drizzle with BBQ sauce, and top with salsa, cheese, and cilantro.
