Ingredients

The tostada base

  • 4 tostada shells tostada shells

The toppings

  • ¼ cup shredded cheddar cheese
  • ½ cup reduced fat shredded Mexican blend cheese
  • ½ cup mashed avocado
  • 1 medium lime
  • 1 cup chopped tomato
  • ¼ cup chopped white onion
  • 2 tablespoons chopped cilantro
  • 1 jalapeno jalapeno, sliced thin
  • 2 tablespoons sliced black olives

The protein and beans

  • 7 ounces cooked boneless, skinless chicken breast, cubed
  • cup canned drained black beans, rinsed

Seasoning

  • to taste Kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Combine the cheeses in a small bowl.
  2. In another bowl, mix avocado with lime juice and a pinch of salt.
  3. In a third bowl, combine tomatoes, onion, cilantro, lime juice, salt, and pepper.
  4. Layer each tostada with chicken, black beans, and cheese.
  5. Broil for 2-3 minutes until the cheese melts.
  6. Top with avocado, tomato salsa, jalapeno, and black olives.
  7. Sprinkle with salt before serving.
