Ingredients

The base

  • 3 cups chicken (cooked and shredded or diced)
  • cups Monterey Jack cheese (freshly grated)
  • 2 tablespoons water
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon chili powder
  • 1 unit jalapeño (finely diced, optional)
  • unit limes
  • 8 unit corn tortillas (whole-grain, 5″ to 6″)

Toppings

  • to taste unit sour cream
  • to taste unit avocado
  • to taste unit cilantro

Instructions

  1. Preheat the oven to 450°F.
  2. In a large bowl, combine the chicken, cheese, water, spices, jalapeño (if using), and juice of 1 lime.
  3. Lay the tortillas on a large baking sheet in a single layer.
  4. Distribute the chicken mixture evenly on top of the tortillas, about ½ inch thick.
  5. Bake until the cheese begins to brown, approximately 12 to 13 minutes.
  6. Squeeze the remaining lime over the cooked tostadas and serve warm with toppings.
