Ingredients

The Chicken and Black Bean Mixture

  • 1 tbsp Avocado Oil or Olive Oil
  • ½ cup finely chopped Onion
  • 8 oz Ground Chicken
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • ½ tsp Kosher Salt
  • ½ tsp Ground Cumin
  • 1 cup canned Black Beans
  • 2 tbsp Chipotle Sauce
  • 3 tbsp Salsa Verde

The Mashed Avocado

  • 1 large ripe Avocado
  • 2 tsp fresh Lime Juice
  • ¼ tsp Garlic Powder
  • pinch Salt

The Toppings

  • ½ cup Crumbled Feta Cheese or Cotija Cheese
  • ¼ cup chopped Green Onions
  • 4 Tostada Shells

Instructions

  1. Heat oil in a pan and cook onions with a pinch of salt until softened.
  2. Add ground chicken and seasonings to the pan, cooking until the chicken is fully cooked.
  3. Stir in black beans, chipotle sauce, and salsa verde, cooking until thickened.
  4. Mash avocado with lime juice, garlic powder, and a pinch of salt.
  5. Spread mashed avocado on tostada shells, top with chicken mixture and desired toppings.
