Chickpea Glow Bowls

Instructions
- Soak almonds for dressing and start cooking the rice.
- Preheat the oven to 425°F and prepare a large sheet pan with parchment paper.
- Combine chickpeas, cauliflower, and sweet potatoes on the sheet pan, drizzle with olive oil, and season with salt and pepper.
- Roast the mixture for 30-35 minutes, tossing halfway through.
- Blend the ingredients for the almond curry dressing.
- Assemble the bowls by placing rice at the bottom, adding the roasted chickpea and veggie mixture, and drizzling with dressing. Garnish with cilantro and almonds.
