Chickpea Glow Bowls

Ingredients

  • 1 15oz can chickpeas, drained and rinsed
  • 1 large head cauliflower, chopped into florets
  • 1 large sweet potato, diced
  • 2 tbsp extra virgin olive oil
  • to taste Kosher salt and freshly ground black pepper
  • 1 batch almond curry sunshine dressing
  • 2 cups cooked rice
  • to taste chopped cilantro
  • to taste chopped almonds or peanuts

Instructions

  1. Soak almonds for dressing and start cooking the rice.
  2. Preheat the oven to 425°F and prepare a large sheet pan with parchment paper.
  3. Combine chickpeas, cauliflower, and sweet potatoes on the sheet pan, drizzle with olive oil, and season with salt and pepper.
  4. Roast the mixture for 30-35 minutes, tossing halfway through.
  5. Blend the ingredients for the almond curry dressing.
  6. Assemble the bowls by placing rice at the bottom, adding the roasted chickpea and veggie mixture, and drizzling with dressing. Garnish with cilantro and almonds.
