Prosciutto-Wrapped Cod with Lemon Caper Spinach

Instructions
- Pat the cod fillets dry and let them come to room temperature.
- Once at room temperature, dry them again and season with salt and pepper.
- Wrap each fillet tightly with prosciutto.
- Melt butter or ghee in a skillet over medium heat.
- Cook the wrapped fillets for 5 minutes on each side until they flake easily.
- Remove the fillets and keep them warm on a cooling rack.
- In the same skillet, add garlic and stir for about 30 seconds.
- Add spinach, capers, and lemon juice, cooking until the spinach wilts.
- Serve the spinach on plates, topped with the cod and sprinkled with lemon zest.
