Ingredients

The fish

  • 12-14 oz cod fillets
  • 1.5 oz prosciutto de parma

The cooking fat

  • 2 Tbsp grass-fed butter, ghee, or avocado oil

The seasoning and flavorings

  • 1 clove garlic, minced
  • 4 cups baby spinach
  • 2 Tbsp capers
  • 1 tsp fresh lemon juice
  • Zest of 1 lemon

The seasoning

Instructions

  1. Pat the cod fillets dry and let them come to room temperature.
  2. Once at room temperature, dry them again and season with salt and pepper.
  3. Wrap each fillet tightly with prosciutto.
  4. Melt butter or ghee in a skillet over medium heat.
  5. Cook the wrapped fillets for 5 minutes on each side until they flake easily.
  6. Remove the fillets and keep them warm on a cooling rack.
  7. In the same skillet, add garlic and stir for about 30 seconds.
  8. Add spinach, capers, and lemon juice, cooking until the spinach wilts.
  9. Serve the spinach on plates, topped with the cod and sprinkled with lemon zest.
