Easy Lemon Caper Baked Cod

cod fillets, 1" to 1¼" thick (about 175g | 6oz each)
The sauce

dry white wine or vermouth (or caper brine for alcohol-free)

Instructions
- Preheat the oven to 450°F and cut 8 sheets of aluminum foil, each approximately 12" x 12".
- Melt the ghee in a bowl and mix it with the wine, minced garlic, salt, white pepper, and parsley.
- Zest both lemons and slice them thinly to get at least 12 slices.
- Place 3 slices of lemon in the center of each foil sheet and add a cod fillet on top.
- Spoon the ghee mixture over each fillet and top with capers and lemon zest.
- Cover each fillet with another piece of foil and crimp the edges to seal the packets.
- Place the packets on a baking sheet and bake for 12 to 15 minutes, depending on thickness and desired doneness.
- Open the packets carefully to release steam, then transfer the fish to a serving plate and spoon the juices over the top.
