Easy Lemon Caper Baked Cod

Ingredients

The fish

  • 4 fillets cod fillets, 1" to 1¼" thick (about 175g | 6oz each)

The sauce

  • 2 tbsp ghee
  • 1 tbsp dry white wine or vermouth (or caper brine for alcohol-free)
  • 1 large clove garlic, minced
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • 1 tbsp finely chopped fresh parsley
  • 2 tbsp capers

The garnish

  • 2 lemons for zest and slices

Instructions

  1. Preheat the oven to 450°F and cut 8 sheets of aluminum foil, each approximately 12" x 12".
  2. Melt the ghee in a bowl and mix it with the wine, minced garlic, salt, white pepper, and parsley.
  3. Zest both lemons and slice them thinly to get at least 12 slices.
  4. Place 3 slices of lemon in the center of each foil sheet and add a cod fillet on top.
  5. Spoon the ghee mixture over each fillet and top with capers and lemon zest.
  6. Cover each fillet with another piece of foil and crimp the edges to seal the packets.
  7. Place the packets on a baking sheet and bake for 12 to 15 minutes, depending on thickness and desired doneness.
  8. Open the packets carefully to release steam, then transfer the fish to a serving plate and spoon the juices over the top.
