Ingredients

The cake

  • ¾ cup coconut flour
  • ¼ cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 3 large organic pasture raised eggs
  • 1 large ripe banana
  • ½ cup maple syrup
  • ½ cup almond butter or cashew butter
  • cup non-dairy milk
  • 2 tsp vanilla extract

For topping

  • to taste vanilla frosting
  • to taste sliced organic strawberries

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 9x9 round cake pan or 8x8 baking dish with parchment paper and oil the inside.
  3. In a medium bowl, combine all the dry ingredients and set aside.
  4. In a blender, add all the wet ingredients, including the banana and eggs, and blend until smooth.
  5. Pour the blended mixture into the bowl with the dry ingredients and stir well.
  6. Pour the batter into the prepared baking dish.
  7. Bake for 22-23 minutes.
  8. Let the cake cool before frosting with vanilla frosting and adding sliced strawberries.
