Ingredients

  • ¼ cup coconut flour
  • teaspoon celtic sea salt
  • teaspoon baking soda
  • 3 large eggs
  • ¼ cup palm shortening
  • 2 tablespoons honey
  • 1 tablespoon vanilla extract

Instructions

  1. Combine coconut flour, salt, and baking soda in a food processor.
  2. Pulse in eggs, shortening, honey, and vanilla until well mixed.
  3. Divide the batter evenly between 6 cups in a paper-lined muffin pan.
  4. Bake at 350°F for 20-24 minutes.
  5. Cool for 1 hour before frosting with Paleo Chocolate Frosting.
  6. Serve and enjoy.
