Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Melt the honey or maple syrup and coconut oil in a microwave-safe bowl, stirring until smooth.
- Whisk in the vanilla, coffee granules, and salt.
- Add the quinoa, almonds, cashews, and mixed seeds, stirring until coated.
- Spread the mixture in an even layer on the baking sheet.
- Bake for 20-25 minutes until golden and crisp.
- While baking, melt the chocolate over a double boiler or in the microwave.
- Spread the melted chocolate over the baked mixture and sprinkle with cacao nibs.
- Chill in the fridge for about 30 minutes to set, then break into pieces.
