Cashew Ginger Chocolate Bark

Himalayan or Maldon salt (optional)
Instructions
- Preheat the oven to 350°F.
- Prepare two baking sheets with parchment paper. Place cashews on one sheet and coconut with sesame seeds on the other.
- Roast the cashews in the oven for 5 minutes, then add the coconut and sesame seeds and roast both for an additional 5 minutes.
- Place chocolate chips in a bowl and chop the ginger.
- Pour the hot cashews over the chocolate chips and stir to melt the chocolate.
- Mix in the coconut flakes, candied ginger, and sesame seeds.
- Scoop the mixture onto a tray or pan.
- Sprinkle reserved coconut, sesame seeds, and salt over the warm chocolate bark.
- Let it cool and harden, refrigerate to speed up the process.
