Ingredients

  • ΒΌ cup uncooked quinoa
  • 8 ounces bittersweet chocolate (60% to 65% dark)
  • to taste flaky sea salt (optional)

Instructions

  1. Heat a skillet over medium to medium-high heat.
  2. Puff the quinoa by adding it to the skillet in a single layer until it pops, then set aside to cool.
  3. Melt the chocolate until smooth, either using a double boiler or microwave.
  4. Fold in the puffed quinoa into the melted chocolate.
  5. Use cookie cutters to shape the mixture on a parchment-lined sheet pan or spread it out to cool.
  6. Sprinkle with sea salt if desired, then refrigerate until set.
  7. Once set, remove from molds or break into pieces and enjoy.
