Ingredients

The base

  • 3 ¼ cups quinoa puffs
  • 1 ½ cups peanut butter
  • 6 tbsp hemp seeds
  • 1 tbsp vanilla extract
  • 2 tsp vanilla paste
  • cup maple syrup
  • 1 pinch salt

The topping

  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • to taste extra flaky salt

Instructions

  1. Prepare an 8x8 inch pan with parchment paper.
  2. In a large bowl, combine quinoa puffs, peanut butter, hemp seeds, vanilla extract, vanilla paste, maple syrup, and salt.
  3. Mix the ingredients until well combined.
  4. Transfer the mixture to the prepared pan and firmly press down.
  5. In a small bowl, melt the dark chocolate chips and coconut oil together in the microwave.
  6. Pour the melted chocolate over the pressed quinoa mixture and spread evenly.
  7. Refrigerate for 3-5 minutes, then sprinkle flaky salt on top and refrigerate until the chocolate is firm.
  8. After 10-15 minutes, cut into 16 equal pieces and enjoy.
