Nut and Coconut Bars

Instructions
- Line a 9×13-inch pan with parchment paper.
- Heat a skillet over medium/high heat and add the quinoa, stirring until it pops and turns golden brown.
- Transfer the puffed quinoa to a mixing bowl and add puffed rice, almonds, coconut, chia seeds, and chocolate chips.
- In a saucepan, heat brown rice syrup, honey, cashew butter, vanilla extract, and salt until melted and smooth.
- Pour the syrup mixture over the quinoa mixture and stir until combined.
- Spread the mixture into the lined pan and press down firmly.
- Sprinkle additional chocolate chips and coarse salt on top, pressing them in.
- Freeze for about 1 hour until set.
- Cut into bars and store in an airtight container in the freezer.
