Ingredients

The base

  • ½ cup almond butter
  • ½ cup honey or coconut nectar
  • 1 cup Diced Prunes
  • 1 teaspoon vanilla extract
  • 2 tablespoons organic ground flaxseeds
  • ½ teaspoon sea salt
  • ¼ cup filtered water

The mix-ins

  • ¾ cup gluten free rolled oats
  • ¾ cup quinoa flakes
  • ¼ cup chia seeds
  • cup chopped almonds
  • cup chopped cashews
  • cup chopped macadamia nuts or other nut of choice
  • to taste none Flaky sea salt

Instructions

  1. Preheat the oven to 325 degrees and line an 8-inch square pan with parchment paper, lightly spraying it.
  2. In a food processor, blend almond butter, honey, ½ cup of diced prunes, vanilla, flax seeds, salt, and water until pureed.
  3. In a medium bowl, mix the remaining prunes, oats, quinoa flakes, chia seeds, almonds, cashews, and macadamia nuts.
  4. Combine the dry mixture with the almond butter mixture and stir well.
  5. Press the mixture into the prepared pan, smoothing the top with a spatula and sprinkling with flaky sea salt.
  6. Bake for 30 to 35 minutes until golden brown, then cool completely on a rack before cutting into 12 squares.
