Instructions
- 1. Blend rolled oats in a food processor until fine.
- 2. Add dates, peanut butter, and honey, processing until blended.
- 3. Add water as needed to help blend, scraping down the sides.
- 4. Pour mixture into a bowl, add puffed quinoa, and stir until combined.
- 5. Flatten the mixture into a brownie or bread pan and freeze for 15 minutes.
- 6. In a saucepan, combine peanut butter filling ingredients over low heat.
- 7. Spread the peanut butter filling over the quinoa base and freeze for at least 30 minutes.
- 8. Cover with melted chocolate and return to the freezer.
- 9. Store in the freezer.
