Healthy Peanut Butter Crisp Bars

Ingredients

Base

  • 1 cup rolled oats
  • ½ cup dates
  • cup peanut butter
  • cup honey
  • 1–2 Tbsp water
  • 1 cup puffed quinoa

Peanut Butter Filling

  • ½ cup natural peanut butter
  • 2 Tbsp melted coconut oil
  • 2 Tbsp maple syrup

Chocolate Layer

  • 1 cup chocolate, melted
  • 1 tsp coconut oil

Instructions

  1. 1. Blend rolled oats in a food processor until fine.
  2. 2. Add dates, peanut butter, and honey, processing until blended.
  3. 3. Add water as needed to help blend, scraping down the sides.
  4. 4. Pour mixture into a bowl, add puffed quinoa, and stir until combined.
  5. 5. Flatten the mixture into a brownie or bread pan and freeze for 15 minutes.
  6. 6. In a saucepan, combine peanut butter filling ingredients over low heat.
  7. 7. Spread the peanut butter filling over the quinoa base and freeze for at least 30 minutes.
  8. 8. Cover with melted chocolate and return to the freezer.
  9. 9. Store in the freezer.
