Ingredients

The bars

  • 2 cups quick oats
  • 1 cup crisp rice cereal
  • cup unsweetened shredded coconut
  • cup flaxseed meal
  • 1 Tbsp. chia seeds
  • 1 cup + 2 Tbsp. creamy peanut butter
  • cup honey
  • 2 Tbsp. virgin coconut oil, melted
  • 1 ½ tsp. pure vanilla extract
  • 1–2 Tbsp. water

The chocolate drizzle

  • 4 Tbsp. chocolate chips
  • 1 tsp. coconut oil

Instructions

  1. Combine quick oats, rice krispies, coconut, flaxseed meal, and chia seeds in a medium bowl.
  2. Add the remaining bar ingredients (except water) and mix well; add water if needed to help the dough stick together.
  3. Line an 8×8 or 9×9 pan with parchment paper and transfer the dough, pressing it firmly into the pan.
  4. Freeze the pan for at least 30 minutes to chill the bars.
  5. For the chocolate drizzle, melt chocolate chips and coconut oil in a saucepan over low heat or in the microwave until smooth.
  6. Remove the bars from the pan and drizzle the melted chocolate evenly over them.
  7. Allow the chocolate to harden, then cut the bars into 16 squares and serve.
