Ingredients

Bar Ingredients

  • 1 cup gluten-free pretzels, coarsely crushed
  • 1 ½ cups crisp brown rice cereal, coarsely crushed
  • cup natural chunky peanut butter
  • ½ cup shredded coconut flakes
  • ¼ cup flax meal
  • 1 Tbsp. chia seeds
  • 3 Tbsp. coconut oil, melted
  • 2 Tbsp. honey
  • 1 tsp. pure vanilla extract

Drizzle Ingredients

  • ½ cup mini-chocolate chips
  • 1 tsp. coconut oil

Instructions

  1. Line a 9×9 pan with plastic wrap.
  2. In a medium bowl, combine all bar ingredients and mix well.
  3. Transfer the mixture to the pan and press firmly into the pan.
  4. Refrigerate for at least 1 hour or freeze for at least 20 minutes.
  5. Remove bars from the pan using the plastic wrap and cut into 16 bars.
  6. Melt the chocolate and coconut oil in a saucepan over medium-low heat, stirring continuously.
  7. Drizzle the melted chocolate over the bars.
  8. Store bars in the refrigerator in an airtight container for up to 2 weeks.
