Ingredients

Chocolate Shortbread

  • 1 ¼ cups all-purpose flour
  • cup powdered sugar
  • cup natural cocoa powder
  • ¼ teaspoon salt
  • 1 cup salted butter, melted

Caramel Layer

  • 14 ounces soft caramels, unwrapped
  • ¼ cup heavy cream
  • 1 ½ cups lightly crushed pretzel sticks

Peanut Butter Layer

  • 1 cup creamy peanut butter
  • ¼ cup salted butter, softened
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla

Chocolate Ganache

  • 2 cups semisweet chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F and lightly grease a 9x13-inch baking pan.
  2. In a bowl, whisk together flour, powdered sugar, cocoa powder, and salt, then stir in melted butter to form a soft dough.
  3. Press the dough into the prepared pan and bake for 10-12 minutes until set, then cool completely.
  4. In a microwave-safe bowl, combine caramels and cream, heating in 1-minute intervals until smooth.
  5. Spread the caramel over the cooled shortbread layer, or mix pretzels into the caramel and dollop it on top.
  6. In another bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until creamy, then spread over the caramel layer.
  7. For the ganache, heat cream until just below simmering, pour over chocolate chips, let sit, then stir until smooth.
  8. Spread the ganache over the peanut butter layer and refrigerate until set, at least 20 minutes.
