Ingredients

  • 6 cups rice Chex
  • 1 cup drippy peanut butter
  • ½ cup brown rice syrup
  • ½ cup honey
  • cup chopped peanuts, roasted and salted
  • cup mini chocolate chips
  • ½ teaspoon kosher salt

Instructions

  1. Line a 9x13-inch casserole dish with parchment paper.
  2. Pulse the rice Chex in a food processor until broken into small pieces, or place in a bag and crush by hand.
  3. In a large bowl, mix the peanut butter, brown rice syrup, and honey until combined.
  4. Add the crushed Chex, peanuts, and chocolate chips to the mixture and stir until everything is coated.
  5. Pour the mixture into the lined dish and press it down evenly.
  6. Freeze for 1-2 hours until set.
  7. Lift the bars out using the parchment paper and cut into desired shapes.
