Instructions
- Line a baking sheet with parchment paper.
- Heat a skillet to medium heat and melt the coconut oil.
- Add the quinoa and cook, stirring often, until golden brown (about 5 to 8 minutes).
- Transfer the cooked quinoa to a medium bowl and mix in the cashews, sea salt, and cayenne pepper.
- Melt the chocolate in a double boiler, stirring often to prevent burning.
- Combine the melted chocolate with the quinoa mixture and stir well.
- Drop spoonfuls of the mixture onto the prepared parchment paper.
- Refrigerate for 15-20 minutes until hardened.
