Ingredients

  • 1 tablespoon coconut oil
  • ½ cup quinoa, rinsed
  • ½ cup salted cashews, chopped
  • 1 teaspoon sea salt
  • teaspoon cayenne pepper (optional)
  • 3 ½ ounces dark chocolate bar

Instructions

  1. Line a baking sheet with parchment paper.
  2. Heat a skillet to medium heat and melt the coconut oil.
  3. Add the quinoa and cook, stirring often, until golden brown (about 5 to 8 minutes).
  4. Transfer the cooked quinoa to a medium bowl and mix in the cashews, sea salt, and cayenne pepper.
  5. Melt the chocolate in a double boiler, stirring often to prevent burning.
  6. Combine the melted chocolate with the quinoa mixture and stir well.
  7. Drop spoonfuls of the mixture onto the prepared parchment paper.
  8. Refrigerate for 15-20 minutes until hardened.
