Pistachio-Crusted Salmon

The topping

Dijon-style mustard

shelled salted and dry roasted pistachios, crushed
Instructions
- Preheat the oven to 400°F and line a baking tray with parchment paper.
- Pat the salmon dry and divide it into three portions. Season with salt and pepper, placing it skin-side down on the tray.
- Mix the mustard and chives in a bowl and spread the mixture on each piece of salmon.
- Sprinkle the crushed pistachios on top of the mustard and press them down gently.
- Bake in the oven for about 10 minutes, or until cooked to your desired doneness.
- Let the salmon rest for a few minutes before serving.
