Ingredients

The salmon

  • 1 pound wild king salmon fillet
  • to taste Kosher salt
  • to taste Freshly-ground black pepper

The topping

  • 3 tablespoons Dijon-style mustard
  • 1 tablespoon chopped chives or scallions
  • ½ cup shelled salted and dry roasted pistachios, crushed

Instructions

  1. Preheat the oven to 400°F and line a baking tray with parchment paper.
  2. Pat the salmon dry and divide it into three portions. Season with salt and pepper, placing it skin-side down on the tray.
  3. Mix the mustard and chives in a bowl and spread the mixture on each piece of salmon.
  4. Sprinkle the crushed pistachios on top of the mustard and press them down gently.
  5. Bake in the oven for about 10 minutes, or until cooked to your desired doneness.
  6. Let the salmon rest for a few minutes before serving.
