Ingredients

The salmon

  • 4 fillets salmon
  • 2 lbs salmon (total weight)
  • to taste salt
  • to taste black pepper

The glaze

  • ¼ cup honey
  • 2 tbsp dijon mustard
  • 1 clove garlic (minced)
  • 1 tbsp lemon juice

The crust

  • cup crushed pistachios

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Pat the salmon dry and season liberally with salt and pepper.
  3. In a small bowl, mix together the honey, dijon mustard, minced garlic, and lemon juice.
  4. Add the crushed pistachios to the mixture and combine well.
  5. Spread the pistachio mixture evenly over the salmon, pressing it down gently.
  6. Bake for 15 minutes, then broil for an additional 2-3 minutes to achieve a brown crust.
  7. Let the salmon cool for 10 minutes before serving.
