Ingredients

The cookie dough

  • cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup grapeseed oil or palm shortening
  • ½ cup agave nectar or honey
  • 1 tablespoon vanilla extract

The mix-ins

  • ½ cup dried cranberries
  • 1 cup walnuts, toasted
  • ½ cup chocolate chips

Instructions

  1. Combine almond flour, salt, and baking soda in a large bowl.
  2. In a small bowl, mix together oil, agave, and vanilla.
  3. Stir the wet ingredients into the dry ingredients.
  4. Fold in cranberries, walnuts, and chocolate chips.
  5. Form the dough into 1-inch balls and press onto a parchment-lined baking sheet.
  6. Bake at 350°F for 7-10 minutes.
  7. Cool and serve.
