The rice

uncooked jasmine rice
Instructions
- Combine jasmine rice with 3 cups of cold water in a pot, cover, and bring to a boil.
- Once boiling, reduce heat to low and simmer for 30 minutes, then let sit undisturbed.
- Dice the onion, mince the garlic, and grate the ginger.
- Sauté onion, garlic, and ginger in olive oil over medium heat until softened.
- Add turmeric, cumin, cinnamon, and red pepper; sauté for 2 minutes.
- Dice the chicken and add it to the pot, cooking until fully cooked (7-10 minutes).
- Stir in diced tomatoes and bay leaf, cover, and simmer for 30 minutes.
- Turn off heat and stir in coconut milk; season with salt and pepper.
- Fluff the rice and serve the chicken mixture over it, garnished with cilantro if desired.
