Turmeric Chicken

Ingredients

The chicken and spices

  • 2 Tbsp olive oil
  • ½ unit red onion
  • 2 inches fresh ginger
  • 1 Tbsp minced garlic
  • ½ Tbsp turmeric
  • ½ tsp ground cumin
  • ½ tsp cinnamon
  • ¼ tsp crushed red pepper
  • 1 whole bay leaf
  • 2 lb chicken (breast or thigh)
  • 1 15oz. can diced tomatoes
  • 1 13.5oz. can coconut milk
  • to taste unit salt & pepper
  • ¼ bunch fresh cilantro (optional)

The rice

  • 2 cups uncooked jasmine rice

Instructions

  1. Combine jasmine rice with 3 cups of cold water in a pot, cover, and bring to a boil.
  2. Once boiling, reduce heat to low and simmer for 30 minutes, then let sit undisturbed.
  3. Dice the onion, mince the garlic, and grate the ginger.
  4. Sauté onion, garlic, and ginger in olive oil over medium heat until softened.
  5. Add turmeric, cumin, cinnamon, and red pepper; sauté for 2 minutes.
  6. Dice the chicken and add it to the pot, cooking until fully cooked (7-10 minutes).
  7. Stir in diced tomatoes and bay leaf, cover, and simmer for 30 minutes.
  8. Turn off heat and stir in coconut milk; season with salt and pepper.
  9. Fluff the rice and serve the chicken mixture over it, garnished with cilantro if desired.
