Ingredients

  • 3 ears fresh raw corn
  • cups cooked black beans
  • 1 medium tomato
  • ¼ tsp cumin
  • ½ tsp salt
  • 1 tbsp fresh lime juice
  • 1 unit jalapeno pepper
  • ¼ cup fresh parsley
  • 1 unit avocado
  • 4 units lime wedges

Instructions

  1. Cut the corn from the cob and place the kernels in a mixing bowl.
  2. Add black beans and all remaining ingredients except the avocado and lime wedges.
  3. Mix well and serve immediately or refrigerate for a couple of hours to blend flavors.
  4. When ready to serve, add avocado, stir, and serve with lime wedges.
