15-Minute Instant Pot Baby Carrots

Ingredients

The carrots

  • 2 pounds baby carrots

The broth and seasonings

  • ½ cup veggie broth
  • ¼ cup unsalted butter
  • 6 tablespoons brown sugar
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Pour the broth into the Instant Pot.
  2. Place the carrots in the bottom of the pot.
  3. Top the carrots with the butter.
  4. Sprinkle with brown sugar, salt, and black pepper.
  5. Seal the lid and cook on high manual for 4 minutes.
  6. Allow the pressure to release naturally for 3 minutes, then do a quick release.
  7. Stir in the lemon juice and serve warm.
