Ingredients

The carrots

  • 1-2 lbs Baby Carrots
  • 1 unit Orange, zested
  • ½ cup Orange Juice
  • 1 pinch Salt
  • 2 Tbsp Butter
  • ⅛-¼ tsp Nutmeg
  • 3-4 Tbsp Real Maple Syrup
  • tsp Maple Flavoring (optional)
  • 2-4 Tbsp Brown Sugar

To thicken

  • 2 tsp Corn Starch
  • 3 Tbsp Cold Water

Instructions

  1. Add the carrots, orange zest, orange juice, salt, butter, nutmeg, and maple syrup to the Instant Pot and stir well.
  2. Close the lid and set the steam release knob to the Sealing position.
  3. Select the Pressure Cook/Manual setting and set the time to 3 minutes at high pressure.
  4. Once the cooking cycle is complete, perform a Quick Release by turning the steam release knob to the Venting position.
  5. When the pressure has released, open the lid carefully.
  6. Stir in the maple flavoring and brown sugar.
  7. Turn on the Sauté setting, and when the liquid simmers, stir in the corn starch slurry until thickened.
  8. Turn off the Instant Pot and serve the carrots immediately with the glaze.
