Ingredients

The carrots

  • 2 pounds carrots

The sauce

  • 3 tablespoons unsalted butter
  • ¼ cup honey
  • 1 zest orange
  • ½ teaspoon kosher salt
  • to taste fresh parsley (for garnish)

Instructions

  1. Peel and chop the carrots into 1 ½-inch chunks.
  2. Melt the butter and pour it into the slow cooker.
  3. Add honey, orange zest, and salt to the butter, then stir to combine.
  4. Add the carrots to the slow cooker and stir to coat them with the sauce.
  5. Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours until tender, stirring halfway through.
  6. Serve warm, garnished with parsley.
