Ingredients

The carrots

  • 2 lbs carrots, peeled and sliced into ½ inch pieces

The glaze

  • ¼ cup butter, melted
  • cup brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • teaspoon nutmeg
  • 1 tablespoon chopped parsley

Instructions

  1. Place the sliced carrots in a slow cooker.
  2. In a small bowl, whisk together the melted butter, brown sugar, salt, cinnamon, and nutmeg.
  3. Pour the brown sugar mixture over the carrots and toss to coat them evenly.
  4. Cook on HIGH for 3 hours or until the carrots are tender.
  5. If desired, to thicken the glaze, remove the cover and cook on HIGH for an additional 15 minutes.
  6. Sprinkle with chopped parsley before serving.
