Ingredients

The carrots

  • lbs carrots, peeled, sliced on a bias ¼-inch thick

The cooking liquid

  • ¾ cup vegetable broth
  • ½ tsp salt, or to taste
  • black pepper to taste

The glaze

  • 3 Tbsp brown sugar or honey
  • 2 Tbsp butter, diced into small pieces
  • 1 Tbsp chopped fresh parsley (optional)

Instructions

  1. Pour vegetable broth into a skillet and bring to a boil over medium-high heat.
  2. Add the sliced carrots and season with salt, then cover and simmer for 6 to 8 minutes until nearly tender.
  3. Drain excess liquid from the skillet.
  4. Add brown sugar and butter to the carrots, toss to combine, and cook for an additional 2 minutes.
  5. Adjust seasoning with more salt and sprinkle with black pepper and parsley before serving warm.
