Glazed Carrots

Instructions
- Slice carrots julienne style about ½ inch thick.
- Heat oil in a large skillet over medium heat, add carrots and sear without stirring for 4-5 minutes.
- Stir and let sit until carrots are lightly browned on the edges.
- Add water, maple syrup, balsamic vinegar, butter, rosemary, black pepper, and salt, bring to a boil, then simmer covered for 5-8 minutes until carrots are al dente.
- Remove the lid, stir, and reduce the liquid until syrupy, stirring occasionally for about 8-12 minutes.
