Ingredients

The carrots

  • lbs carrots

The glaze

  • 1 tablespoon avocado oil or coconut oil
  • cup water
  • 3 tablespoons maple syrup
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons unsalted butter
  • 2 sprigs fresh rosemary
  • ¼–½ teaspoon black pepper
  • ¼–½ teaspoon salt

Optional garnish

  • to taste fresh parsley
  • to taste orange juice

Instructions

  1. Slice carrots julienne style about ½ inch thick.
  2. Heat oil in a large skillet over medium heat, add carrots and sear without stirring for 4-5 minutes.
  3. Stir and let sit until carrots are lightly browned on the edges.
  4. Add water, maple syrup, balsamic vinegar, butter, rosemary, black pepper, and salt, bring to a boil, then simmer covered for 5-8 minutes until carrots are al dente.
  5. Remove the lid, stir, and reduce the liquid until syrupy, stirring occasionally for about 8-12 minutes.
