Ingredients

The carrots

  • 1 ½ lbs carrots, peeled and cut into ½ inch thick slices

The glaze

  • ¼ cup butter
  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Place sliced carrots in a large pan and add 1 ½ cups of water.
  2. Bring the carrots to a simmer and cook for 8-10 minutes or until tender.
  3. Drain off any excess water.
  4. Add butter, brown sugar, and salt to the pan and stir to coat the carrots.
  5. Cook for an additional 4-5 minutes, stirring occasionally, until a glaze forms.
  6. Sprinkle with parsley if desired, then serve.
