Glazed Carrots

Ingredients

The carrots

  • 2 pounds carrots, peeled and cut

The broth

  • 1 cup chicken broth or vegetable broth

The sweeteners

  • 6 tablespoons granulated sugar

The seasoning

  • to taste salt
  • to taste freshly ground black pepper

The fat

  • 2 tablespoons butter, cut into pieces

The acidity

  • 4 teaspoons lemon juice, freshly squeezed

Instructions

  1. In a large skillet, combine carrots, broth, 2 tablespoons of sugar, and salt.
  2. Cover and bring to a boil, then reduce to a simmer and cook covered for about 5 minutes until the carrots are almost tender.
  3. Uncover and return to a boil, cooking until the liquid reduces to about 4 tablespoons, approximately 2 minutes.
  4. Stir in the butter and remaining sugar, cooking while stirring until the carrots are fully tender and the glaze is golden, about 3 minutes.
  5. Remove from heat, stir in lemon juice, and season with pepper to taste.
