Sheet Pan Balsamic Glazed Carrots

Ingredients

The carrots

  • 2 pounds carrots

The glaze

  • 2 tablespoons avocado oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons maple syrup
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped

For garnish

  • to taste flaky salt
  • to taste crushed red pepper flakes

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper, then spray with oil.
  2. Peel the carrots and cut them into 2-inch pieces, then toss with oil, salt, and pepper in a bowl.
  3. Arrange the carrots in a single layer on the baking sheet and cook for 30 to 35 minutes until tender and caramelized.
  4. While the carrots are cooking, heat balsamic vinegar and maple syrup in a saucepan over medium heat until boiling, then cook for 7 to 9 minutes until thick.
  5. Remove from heat, add butter, whisk until melted, and let cool.
  6. Serve the carrots on a platter, drizzle with the balsamic glaze, and sprinkle with parsley and optional garnishes.
