Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper, then spray with oil.
- Peel the carrots and cut them into 2-inch pieces, then toss with oil, salt, and pepper in a bowl.
- Arrange the carrots in a single layer on the baking sheet and cook for 30 to 35 minutes until tender and caramelized.
- While the carrots are cooking, heat balsamic vinegar and maple syrup in a saucepan over medium heat until boiling, then cook for 7 to 9 minutes until thick.
- Remove from heat, add butter, whisk until melted, and let cool.
- Serve the carrots on a platter, drizzle with the balsamic glaze, and sprinkle with parsley and optional garnishes.
