Maple Glazed Carrots

Ingredients

The glaze

  • ½ cup maple syrup or sugar free maple syrup
  • ¼ to ⅓ cup coconut sugar or brown sugar
  • ¼ cup pure bourbon whiskey
  • 1 Tablespoon orange juice or 1 teaspoon apple cider vinegar
  • ¼ teaspoon ground ginger
  • pinch nutmeg (optional)

The carrots

  • 8 to 10 medium to large whole carrots (1.25 to 1.5 lbs)
  • 1 to 2 Tablespoons light olive oil
  • to taste Kosher salt and black pepper
  • to garnish Fresh herbs and lemon juice

Instructions

  1. Combine the glaze ingredients in a saucepan and bring to a light boil.
  2. Reduce heat and simmer until the glaze thickens, stirring occasionally.
  3. Preheat the oven to 400°F.
  4. Peel and clean the carrots, then cut off the tops.
  5. Place the carrots in a baking dish and drizzle with olive oil, tossing to coat.
  6. Brush or drizzle part of the glaze over the carrots and season with salt and pepper.
  7. Bake for 20 minutes, then turn the carrots and brush with more glaze.
  8. Return to the oven and bake until tender, about 15 to 20 minutes more.
