Maple Glazed Carrots

coconut sugar or brown sugar

pure bourbon whiskey

orange juice or 1 teaspoon apple cider vinegar

ground ginger

The carrots
-
8 to 10
medium to large
whole carrots (1.25 to 1.5 lbs)

light olive oil

Kosher salt and black pepper

Fresh herbs and lemon juice
Instructions
- Combine the glaze ingredients in a saucepan and bring to a light boil.
- Reduce heat and simmer until the glaze thickens, stirring occasionally.
- Preheat the oven to 400°F.
- Peel and clean the carrots, then cut off the tops.
- Place the carrots in a baking dish and drizzle with olive oil, tossing to coat.
- Brush or drizzle part of the glaze over the carrots and season with salt and pepper.
- Bake for 20 minutes, then turn the carrots and brush with more glaze.
- Return to the oven and bake until tender, about 15 to 20 minutes more.
